Ingredients: Four 150g fillet steaks
200g green tea soba or regular soba noodles
2 tea spoons of sesame oil
1/4 cup (3 table spoons) miso paste

2 tea spoons slightly toasted sesame seeds
Brush each fillet steak with oil and season. Heat up a frying pan or a grill pan, and cook the steaks for three minutes on each side at high temperature. Fry according to your beef preference, and when satisfied remove the steaks and cover them loosely with foil. Allow them to cool down for five minutes.
Meanwhile, cook your noodles and cool it by rinsing it under a running cold water tap. Drain your noodles and transfer them to a large bowl. Toss the noodles with sesame oil and set it aside.
Stir miso and mirin in another pan at medium temperature, and whisk them till they appear smooth. Slice the steaks left standing into thin slices, preferably diagonally, and toss the strips with noodles, miso dressing and spring onion.
